Coconut Macaroon Recipe


I can't even describe my love for these heavenly cookies that are called coconut macaroons. They are soft, moist, coconuty (yes I just made up that word) and chocolatey.... what's not to love about that!  I mean... am I right, or am I right, or am I right :) I think only crazy people who don't like coconut would despise such a cookie. 



Coconut Macaroons  *yield about 2 dozen*
 
4 large (120 grams) egg whites, at room temperature
1 cup (200 grams) granulated white sugar
1/4 teaspoon salt
1 teaspoon pure vanilla extract
1/2 cup (60 grams) cake flour, sifted
3 cups (300 grams) dried sweetened coconut, shredded or flaked

Directions
In a heatproof bowl placed over a saucepan of simmering water, whisk together the egg whites, sugar, and salt. When this mixture is warm to the touch, and nice and creamy, remove from heat and stir in the vanilla extract, flour, and coconut. Cover and refrigerate for about two hours. 
 
Preheat oven to 325 degrees F. Generously spray two cookie sheets with non- stick spray 
Place small mounds of the batter on baking sheet, spacing several inches apart. Bake for about 15 to 20 minutes or until golden brown.  Remove from oven and let cool on the baking sheet for about 10 minutes and then place on a wire rack to cool.

Julie's notes 
  • When making these cookies I always plan ahead and make the batter the night before. I find it easier to work with and a much better tasting cookie if the batter rests overnight as opposed to the recommend two hours.
  • Some recipes say to line your cookie sheets with parchment paper. And you certainly could do that, I have found however that a good quality baking sheet sprayed with a non-stick spray works wonders, especially with these cookies. 
  • To ensure the same size and consistency  for each cookie, I always use a cookie scoop like found here
  • To dip the cookies in chocolate, wait till the cookies are completely cooled. Create a double boiler with your chocolate of choice. I like using Merkens Dark Chocolate which can be purchased here. Once dipped in chocolate place cookies on baking sheets lined with wax paper and wait for chocolate to solidify

  1. Those look so good. Is that chocolate kind of like chocolate bark, the kind that hardens by itself? Whenever I try to cover things with plain chocolate it doesn't get hard enough, even with shortening added.

    1. Libbie this chocolate is like bark, it's manly used for candy making and hardens like a champ. You can use regular chocolate, like chocolate chips for example but you have to make sure to buy the quality chocolate. Some chocolate chips packages will actually say "chocolate flavoring"... which means it's not real and not meant to be used for dipping.
