Switzerland, France, & Quiche

At the start of the summer the husband and I embarked on an adventure. We went to Switzerland to visit some dear friends and along the way hit up six other countries! We both used to live in Europe long before we knew one another, so going back as a couple and visiting our old stomping grounds was a dream of ours pretty much from the first date:)


We spent day one in Geneva and on day two we rented a car and drove to Colmar France...pretty much the most picturesque little European town ever!

Along the way we stuffed our faces with the most delicious food and pastries, ah here we go, finally shes getting to the food part. Don't worry I wouldn't leave you hanging, this is after all a food blog:)  Keeping with the French theme, let's talk about quiches!! Mmm...quiche. I don't know about you, but I'm a huge fan!

(this also serves as proof that I can make something that doesn't involve sugar :) 

I made a couple quiches while in culinary school but I never gave them a second thought really. That is until I married Jordan, and he started making them for me. I was in HEAVEN, and thus began my love affair with quiche...and my husband of course ;)

They're fun, delicious, quick and easy. Once you get the gist of it you can pretty much experiment with the main ingredients as you wish and come up with an amazing one of a kind recipe to fit your likes!  Here's my favorite for the week, sweet potato, ham, and Swiss cheese quiche. Even the Switzerland loving, French speaking, quiche expert husband approves this one! Score!


Sweet Potato, Ham, and Swiss Cheese Quiche
(yields one quiche, but if I were you I would double that bad boy and just make two!)

 
Ingredients 
1 large sweet potato cubed
1 cup cubed ham
1 (8 or 9-inch) premade pie dough 
1 cup shredded Swiss Cheese
4 eggs
1 cup milk
1 teaspoon all-purpose seasoning.

Directions
Preheat oven to 400 degrees F.

Place potatoes in a microwaveable dish. Cover with a damp paper towel and microwave for 2 minutes, until almost cooked through.

Cover the bottom of the premade pie dough with potatoes, ham, and cheese. Place on a cookie sheet and set aside.

In a medium bowl, whisk together eggs, milk, and seasoning and pour into the pie shell.

Place quiche into preheated oven for 35 to 40 minutes or until eggs have set.
